Good Morning!
I have been thinking what all I need to get done these next couple of days.. like, go and get my nails done, laundry, decide what to pack, and then do my packing! These days are going by soo fast! I'll be at Michele's before I know it, & I am soo anxious! :)
I went to my weight watcher's meeting, and I did gain .4 of a pound. Guess that isn't all that bad really.. I knew I probably would gain, as I've not been real careful as to what I was eating last week. Now, I've got to behave myself when I am at Michele's.. I'm sure Michele will help keep her Mom on the right track! I found a place that has the weight watcher meetings that is real close to Michele's. That's great, as now I'll still be able to go to them! I don't like to miss any meetings if I can help it.

I found a real neat recipe that I'd like to share with you. It's called
~BEAN and CHEESE NACHOS~
**INGREDIENTS**
32 baked low fat tortilla chips
1 cup fat free canned refried beans
1/2 cup shredded reduced fat Monterey Jack cheese
1/4 cup salsa
Thin slices of seeded jalapeno chili (optional)
Preheat oven to 350*F. Layer tortilla chips on an ovenproof platter or baking sheet. Spread beans evenly over chips and sprinkle with cheese. Bake until beans are hot and cheese is melted, about 5 minutes. Top with salsa. Garnish each serving with a thin slice of seeded jalapeno chili for added zip.
This makes 4 servings.. and is only 3 weight watcher points for those of you doing weight watcher's..
I haven't tried making this yet, but it sure does sound delish, and easy enough too!
I am a real fan of Mexican food and this I will definately be giving a try!
